A smooth pizza pan (without perforated holes) is the greatest option if you and your customers want a thick, soft, chewy pizza crust. A smooth pan allows less heat to reach the pizzas dough, resulting in much more of a moist crust once cooked.

Unlike other materials such as cast iron, aluminium conducts heat swiftly and evenly, resulting in a significantly reduced cooking time while maintaining consistent results. Hand tossed pizzas have less air bubbles in the dough due to the amount of time the dough has been handled which results in a much crisper crust. With a pizza pan however, the dough has been handled much less and so all of those air bubbles have stayed behind, this is what helps to create that thick, spongy texture.

The rim of the pan prevents the crusts from overflowing, allowing the pizza to maintain its trademark shape whilst also reducing food waste.
